Hello friends, I hope you all enjoyed the long holiday weekend! We are busy with renovations here in Florida and are hoping to complete the two bathroom remodels in the next few weeks! We’ve also done a lot of landscaping work, but it’s hot in here! It’s 30 degrees most days so we’re always looking for ways to cool down a bit.
I made this tropical popsicle and it was a hit. They are frozen tropical fruit on a stick!
The recipe is simple, it’s basically a combination of a few ounces of diced tropical fruit with a squeeze of lime juice and a few coconut chunks. You can vary this as you like!
Ingredient list:
4 oz. freshly diced pineapple
2 ounces. freshly diced peaches
2 ounces. fresh diced mango
1 ounce. fresh coconut bites
Shot half & half
juice of 1 lime
8 ounces. coconut water
Note: These are not as sweet as store bought popsicles, they taste like mixed natural fruit popsicles.
If you like sweeter popsicles, consider adding a sweetener such as 1 tablespoon sugar or a drop of stevia, or use sweetened coconut water. Sweeten to taste before pouring into popsicle molds.
Mix fruit, coconut, coconut water and a dash of cream in a blender. Add a squeeze of a lime. Pour into popsicle molds, insert chopsticks, freeze for six hours.
It will take about five minutes for the frozen popsicle to melt into the mold, but when it does, enjoy!
